Tomato Goat Cheese Chicken Recipe| Day 25

Today I’m sharing my favorite chicken recipe: sundried tomato goat cheese chicken stuffed with spinach! This is a dinner I make at least once a week because of how good it tastes. It completely transformed the way I see chicken breast!

Total Prep Time: 1 hour
Serves: 2 (for more servings, just multiply the portions by 2!)

2 large chicken breasts
1/2 cup sun dried tomatoes
1/2 cup roughly chopped spinach
1/2 cup goat cheese (No goat cheese? You can substitute mozzarella or feta for a similar effect!)
Olive oil, for cooking

1. Using a large knife, cut the chicken breasts in half, hotdog style, to make room for the ingredients.
2. Open up chicken breasts and layer ingredients inside. You may want to stick a few toothpicks in to keep the ingredients together.
3. Heat stovetop to medium heat and grill chicken breasts in a pan with olive oil. If you don’t feel like searing, another option is putting them on a baking sheet in the oven at 375 F.
4. Make sure the chicken is fully cooked and the center has reached 165 F.

Serve over salad greens, with a veggie and/or a carb like quinoa, and enjoy!
